Andoni Luis Aduriz**

Like his colleague Elena Arzak, two-Michelin-star chef Andoni Luis Aduriz also feels a very strong connection with his home town of San Sebastián – Donostia in Basque. He was born here, attended its  "School of Hotel and Restaurant Management" and gained his first experience as a chef, for example in the Arzak's restaurant. He then expanded his knowledge by working at top European venues, including Fermín Arrambide in France and the legendary El Bulli of Spanish master Ferran Adrià. Before he opened his own restaurant Mugaritz in 1998, he also worked at the side of three-star chef Martin Berasategui in Lasarte, a small town ten kilometres to the south-west of San Sebastián. Andoni Luis Aduriz was gradually working his way back to his home town.

 

Finally in 1998 at the age of just 26, he took over the kitchen at Mugaritz, a converted farmhouse in the town of Errenteria, just outside San Sebastián. The restaurant attracts locals and well-travelled gourmets alike and has already been the cause of many hymns of praise. Andoni Luis Aduriz composes dishes like a young Mozart and he is also a kind of crown prince of master chef Ferran Adrià.

 

Like his Basque colleagues, Andoni Luis Aduriz also loves regional cuisine and integrates it into his creations. His lovingly maintained herb and vegetable garden and the meadows and fields around his restaurant also inspire him to experiment with unusual herbs, rare grains, flowers and shoots.

 

The two-star chef, who was named "Chef of the Year" by the Spanish Academy for Gastronomy in 2002, is certain to inspire more hymns of praise at the CHEF-SACHE 2011.
