With his classic modern cuisine Christian Bau has cooked up three Michelin stars at Victor's Gourmet-Restaurant Schloss Berg in Perl-Nennig. He has been head chef since 1998 and can look back on many achievements, including third place at the 1996 world final of the Prix Taittinger, the unofficial world championships of cooking. He also currently has 19 Gault Millau points.
For some time now the star chef has clearly been moving away from French haute cuisine and his former masters like Harald Wohlfahrt. The classic modern cuisine and simple interaction with innovative styles is giving way to the creation of ground-breaking trends. Christian Bau has intelligently modernised his food over the last few months and German virtues like perfection and meticulous curiosity can very clearly be seen in his creations. Inspirations from Japanese cuisine philosophy and an uncompromising search for the best products are producing subtle creations with distinctive, personal nuances. Christian Bau has undoubtedly become a significant representative of the New German School.
That Christian Bau finds the necessary time and freedom for creative moments is not just down to his new restaurant concept Carte Blanche, which has no traditional menu, but also his wife Yildiz Bau. She runs the service and keeps her husband's plate clear.
Like many chefs from the German region, Christian Bau is also one of those who has supported the CHEF-SACHE from the start. So the star chef couldn't let this year pass without taking to the stage once again. We can't wait!
