When Jonnie Boer achieved his third Michelin star in 2004 with his De Librije restaurant, he could hardly escape the questions of inquisitive journalists. Three stars for a Dutch restaurant; only Cees Helder had achieved that before him and only Sergio Herman has achieved it since. Despite the hype, Jonnie Boer has remained pleasantly down-to-earth and unperturbed continues to produce his topflight Dutch cuisine.
Unlike other chefs who go wandering in search of instruction, Jonnie Boer chose independence early on and built up his own small enterprise. In the Hanseatic City of Zwolle he renovated an old monastery from the 16th century and opened the De Librije restaurant, which translates as "library". However, it is not the enjoyment of good books that is at the heart of this modern restaurant, but rather the enjoyment of varied and at times bold creations. The focus is clearly on regional cuisine. Jonnie Boer gets his game from hunters who stalk in the nearby forests and only buys from fishermen who cast their nets in local waters. The star chef sees it as an enormous advantage that if needed he can visualise the products he works with on a daily basis. He also believes in a regular exchange of information with the breeders. Jonnie Boer's first star in 1993 was due in no small part to his consistent development of a local network. The second followed six years later and the Michelin Guide finally awarded him the third in 2004. Achieving 19.5 out of 20 Gault Millau points and Chef of the Year 2005 are further confirmation of his talent.
Jonnie Boer will demonstrate his show talent on the CHEF-SACHE stage this year and will win over the public with his congenial style and his talent.
